Fall Healthy Crockpot Recipes for Your Slow Cooker

There’s no better way to handle a busy schedule than with a slow cooker.

Recently I shared recipe ideas for busy back-to-school evenings. I gave some ideas for getting wholesome meals on the table quickly, and a slow cooker (aka Crockpot) is such a handy tool for that. 

This week I’m sharing a Crockpot recipe for every day of the week! I have the classics you would expect, like noodle dishes and soups, along with ones you might not, like chicken teriyaki.

It sounds more interesting than the Midwest comfort food you would expect from a slow cooker, but you probably have all of the ingredients in your pantry. 


Crockpot Chicken Teriyaki

Ingredients

  • 2 pounds boneless skinless chicken

  • breasts

  • 1/2 cup honey

  • 3/4 cup soy sauce

  • 1/4 cup rice vinegar

  • 1/2 tsp ground ginger

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp black pepper

  • 1 tsp sesame oil

  • 1 TBSP cornstarch

  • 1 TBSP cool water

  • Ben's original ready rice whole grain brown rice microwavable pouch

  • 15 ounce package Birds Eye frozen stir-fry veggies

Directions

  1. Spray crockpot with non-cook spray. Add the sauce ingredients in the order listed into the crockpot and whisk to combine. Do not add the cornstarch and water mixture

  2. Place chicken breasts into the crockpot and turn to coat. Cook on low for 6 hours or high for 3 hours or until chicken is easily shred with a fork.

  3. Remove chicken from the crockpot and place into a medium serving dish. Do not discard the sauce. Shred the chicken with two forks. Cover and set aside. Set a fine mesh strainer over 4-quart saucepan and carefully pour sauce

  4. through the strainer into the saucepan.

  5. Mix cornstarch in water and add to the sauce, stir or whisk until fully incorporated. Bring sauce to a boil over medium-high heat and cook, stirring constantly, until sauce is thickened.

  6. Mix half of the sauce into the shredded chicken, and save half of the sauce for serving.

  7. Serve with brown rice & stir-fried veggies
