Keep it simple, SIS! If your meal plan seems stale or if you are struggling to get healthy meals to the table in time, it’s time to get some quick recipes in your pocket.

I rounded up six cozy fall meals that can be prepped and served in just. Ten. minutes. No fussy ingredients that are out of season or will spoil quickly in your fridge. Heck, check your cupboards and freezer for the ingredients to whip these up tonight.

I was going to share my walking tacos recipe, but you can figure that one out, right? It’s not something I remember to have for a meal but think about it: You have a healthy protein, lots of veggies piled in, and olives for healthy fat. Here’s the secret- skip the Doritos in favor of Quest protein chips. Genius, right?

Speaking of genius, try making Thai noodle bowls at home. Don’t worry about finding special ingredients. Just use plain ol’ spaghetti!


Thai Noodle Bowls

INGREDIENTS

  • 5 oz spaghetti noodles

  • 1 cup shredded purple cabbage 

  • 1/2 cup shredded carrots

  • 1/2 cup chopped cilantro

  • 1/2 cup chopped green onions

  • 1/3 cup chopped unsalted peanuts 

  • 1 cup shredded rotisserie chicken

INGREDIENTS FOR THE SAUCE

  • 1/4 cup soy sauce

  • 1/8 cup honey

  • 1/8 cup sesame oil

  • 5-7 cloves minced garlic

  • 1/2 – 1 tsp red pepper flakes

DIRECTIONS

  1. Bring water to boil in a pot. Once water is boil, add spaghetti noodles and cook until al dente (following the directions for time on the package). Remove from heat and drain promptly to prevent noodles from getting mushy.

  2. In a small bowl, mix together all “sauce” ingredients.

  3. Pour sauce onto drained noodles and mix well.

  4. Add shredded cabbage, shredded carrots and shredded cilantro to

  5. noodle mixture. Also add half of the chopped cilantro, chopped green onions and chopped peanuts. Reserve the other half for garnish.

  6. Add shredded rotisserie chicken to noodles. Mix well the noodle mixture.

  7. Garnish with the rest of the chopped cilantro chopped green onions and chopped peanuts when ready to serve. Enjoy!
