Peppermint Dream

Ingredients

  • 4 Oz. Original Bailey’s Irish Cream

  • 1 Oz. Smirnoff Peppermint Vodka

  • Sprinkle of cinnamon

  • Ice

Directions

  1. Pour Bailey’s, vodka, and ice into a shaker. Shake it.

  2. Pour into a lowball glass filled with ice (or martini glass with no ice)

  3. Sprinkle cinnamon on top.

Homemade Thin Mint Cookies

Ingredients

  • 60 round ritz crackers

  • 1 pound chocolate cut into squares, chips, or chunks (i like using dark chocolate but you can use milk chocolate if you prefer)

  • 1/2 teaspoon peppermint extract

Directions

  1. Place the chocolate into a heat-glass bowl and microwave in 30-second intervals, stirring between each interval, until creamy and smooth. Alternatively, place the glass bowl over a pot of simmering water over medium-low heat and melt until smooth, stirring frequently.

  2. Once chocolate is melted, stir in peppermint extract.

  3. Place a cracker onto a fork and dip into the melted chocolate, allow the excess chocolate to drip off throng the prongs of the fork.

  4. Place cookie on wax or parchment paper to dry.

Notes

Thin Mints can be stored in a sealed container in a cool place, for up to 5 days. Or you can store in a freezer or refrigerator in a sealed container for 10 days.

I hope all is calm… but if you find your holidays to be hectic, you’ll appreciate how quickly these party favorites come together.
