Healthier Tuna Casserole Recipe
Who here grew up with tuna casserole as a quick weeknight meal staple recipe?
Or do you call them hotdishes where you are from?
Now you might be thinking:
First: how freakin delicious are noodle casseroles? Erika, are you sure this is a SIS-friendly recipe?
Second: how long has it been since you’ve “indulged” in comfort food.
I’m pretty sure when the American Heart Association suggests to get at least two servings of fish each week, they don’t mean for you to smother it in canned and processed soups…and neither does your fitness coach! Sure, these indulgences are ok on occasion, but why not enjoy a childhood favorite whenever you darn well please with a few healthy upgrades?
As we enter the season of Lent, I’m on the lookout for simple, family-friendly fish recipes, and this one fits the bill and my nutrition goals. I think you’ll be impressed with the creamy sauce. And no, I’m not taking you through the whole “simple” (ahem: Complicated!) white sauce process. It’s as easy as opening a can of cream of mushroom soup, just more wholesome in its ingredient list. I promise you’ll be able to pronounce every ingredient in this recipe.
We’ll add in some mushrooms and peas but those are easily omitted for picky eaters. Some spices, some cheese, all baked to creamy, gooey goodness.
Traditionally folks give up something for Lent. But trust me, there are no sacrifices here!
