12 Easy Meal Prep Recipes
If you’re like me, then you most likely find yourself in a constant battle to stay consistent with your nutrition week to week. When we are busy and on the go like so many women, it’s easy to make a quick decision to grab something fast or stop by the Chik-Fil-A drive thru.
While these things are fine to do every once in a while, it can be detrimental to your nutrition goals (and your wallet!) if they become a habit. This week I’m sharing 12 easy meal prep ideas that you can use over and over again to help you stay on track with your nutrition!
Meal prepping can save you time and money AND help you reach your nutrition goals! Triple win!
When planning out your week, I recommend choosing two to three meals to prep, and set aside 45 minutes to 1 hour to complete your prep on the weekend so it can be done easily and efficiently.
One of my all-time favorite items to prep are the Ham & Cheese cups. These cups are high on protein and taste! Not to mention they make the perfect post-workout meal. I LOVE having a breakfast item ready to go in the morning; it saves me time and I don’t feel tempted to head out to my local Starbucks to grab a food item...and a coffee…and a pup cup for Diego. It turns into If You Give a Mouse a Cookie really quickly!

Ham + Cheese Egg Cups
Ingredients
10 Eggs (or 5 eggs and the rest egg whites)
2 Cups low-fat Cottage Cheese
3/4 Cup Colby Jack Cheese
2 Cups Fresh Spinach
1 Cup Diced Turkey Bacon or Ham 2 Jalapeno Peppers (optional)
1 pinch salt
1 pinch pepper
1 pinch garlic powder
1 dash hot sauce
Directions
Dice up ham (or turkey bacon) and jalapeno peppers. Chop Spinach. Set aside.
In a large mixing bowl crack your eggs.
Season with a pinch of salt, pepper, garlic powder and a dash of hot sauce of choice. Whisk together.
Add in spinach, jalapeno peppers, ham, cheese and cottage cheese. Stir together.
Preheat Oven to 300 Degrees F, and line two muffin pans with foil cups. Spray cups with oil.
Use a 1/4 measuring cup to scoop out the mixture and put in each muffin tin.
Bake at 300 Degrees for roughly 30 minutes. Let cool for 5 minutes
Store in a ziplock back in the refrigerator. Reheat in microwave before eating
