Healthier Christmas Candy Recipes
It’s the most wonderful time of the year…almost Drop 10 cart open! I’m joking, I’m joking! I’m talking about the holidays.
I don’t know about you, but I’ve been waiting for this ALL. YEAR. LONG. The chill in the air, the cozy vibes, the lights on the tree, and Diego in his Christmas sweater puts me in the best mood. Girl, if you’re like me, you’re going to love what I’m sharing with you today, a few of my favorite recipes for making holiday goodies a little healthier and just as tasty!
In 2020, one of the best memories I have was welcoming my mom and sister to my kitchen for our first Christmas in our new home in Olathe. We baked sugar cookies, rolled out peanut butter balls (I die for anything with peanut butter), and dunked more things into chocolate almond bark than I can even count. We enjoyed a little wine and a lot of laughs, if you can imagine, and the house felt so warm and cozy and happy after all the challenges earlier in the year.
Making memories like these are what the holidays are about.
But oftentimes during these weeks between Thanksgiving and New Year, making memories goes hand-in-hand with sugary sweets, cookies loaded with butter, recipes that call for heavy cream and cream cheese, and enough calorie consumption that you want to put yourself on the naughty list!
I believe that we should treat ourselves at least twice each week with a cheat meal, but during the Christmas season, these cheats can escalate quickly when we are surrounded by these high-calorie temptations at every family gathering and holiday party.

Healthier Thin Mint Cookies
INGREDIENTS
60 round ritz crackers
1 pound chocolate cut into squares, chips, or chunks (i like using dark chocolate but you can use milk chocolate if you prefer)
1/2 teaspoon peppermint extract
DIRECTIONS
Place the chocolate into a heat-glass bowl and microwave in 30-second intervals, stirring between each interval, until creamy and smooth. Alternatively, place the glass bowl over a pot of simmering water over medium-low heat and melt until smooth, stirring frequently.
Once chocolate is melted, stir in peppermint extract.
Place a cracker onto a fork and dip into the melted chocolate, allow the excess chocolate to drip off throng the prongs of the fork.
Place cookie on wax or parchment paper to dry.
Thin Mints can be stored in a sealed container in a cool place, for up to 5 days. Or you can store in a freezer or refrigerator in a sealed container for 10 days.
